Duchess potatoes

 

Peel and boil the potatoes. Pass with potatoes masher. Place in saucepan and heat, dry the puree for several minutes. Mix with butter, stirring. Off the heat mix the egg yolks, grated cheese, a bit of nutmeg and a pinch of salt. Put the mixture in a pastry bag with a spout Spizzo of about 1.5 cm. and form on the baking sheet covered with parchment paper so many tufts of about 4 cm. diameter. Brush with a little beaten egg and bake in oven at 200 degrees for 20 minutes until golden brown.
