Spinach flan @

 

Boil the spinach in lightly salted water. Once cooked, drain, cool them, crush them in order to let all the cooking water. Coarsely chop the knife. In a bowl beat eggs, breadcrumbs, ricotta sifted, Parmesan, salt and a little nutmeg.

Put everything in a non-stick shaped donut. Bake in oven at 190 degrees in a water bath (put the form in a saucepan half full of water). When is solid (toothpick test) churn and topple onto a serving plate. Season with tomato sauce or even better with melted cheese.
