Aubergines in tower


Make a tomato sauce rather not too liquid, the way you prefer.

Cut the aubergines into slices about 5 mm thick; wash, dry and fry them.

Dry them well in absorbent paper.

Cut the scamorza into thin slices (2 mm); another cheese can also be used.

Compose, in ovenware pan, the small towers of the preferred height, alternating tomatoes, aubergines, scamorza and bake at 180 °, serve and decorate with a basil leaf. Eat hot.
