CALAMARI STUFFED @

 

Clean the squid, of medium size, being careful not Prick, remove the tentacles and sauté in a pan with a little oil. In mixer chop the tentacles with garlic, parsley, bread soaked in milk, a can of tuna in olive oil. Combine this mixture with eggs, cheese, peas: this dough should not be too liquid. In a pan large enough to prepare the tomato sauce, with garlic, oil and hot pepper. Dilute with wine and water should not be too dense. Fill the squid very carefully, without crushing, up to about 2 cm from the edge; always carefully sewing them or close them using the sticks. Cook them in tomato moderate heat so they will not "explode". Serve warm sliced not too thin (2 cm) in tomato sauce with which you can dress spaghetti, strictly without cheese.
